Croatia is beautiful but not the other things I haven't yet done Greece, I think that would be like Turkey. We tried all inclusive last year, which was much better than I expected. You can go out in your budgie smugglers and not bother. Just wander up to the bar or buffet as you please.

We are doing Alghero in Sardinia at the end of May and Kefalonia in August both of which fit your criteria although a bit hotter than 25 as will most Mediterranean destinations be in Summer. Madeira is a bit cooler but probably not quite as suitable dependant on the ages of your kids

It's a long time since I first went to Spain, and North East Mallorca is now a fav - if you haven't been I'd certainly recommend Cala San Vicente. Food is the standout in a beautiful location, 3 and 4 star hotels - depends on your budget.

also done skiathos / santorini / kefalonia / skopolos in greek islands, all very nice. if kefalonia go to the north of the island, quieter and nicer than the south IMO.
