Out of interest when did you get vaccinated? And how did you qualify (age, health issues..)

While it's good that you've been vaccinated - and there are differences between vaccines - typically it takes around three weeks to offer good protection, and at one week it will likely offer next to none. This is something that's important to be aware of, especially when travelling. In any case, I hope you manage to stay healthy during the trip.

The cynic in me feels that the eu backed down over article 16 as their brief told them they had no chance in law. Just a thought as I'm sure they will try to invoke article 122 about stopping exports out of the eu. Brexit looks more and more like a win win for us. The paperwork side will work out shortly as they need our 100b purchases and our x billion sales to them. Plenty of countries can do the same product wise as they do.
