I haven't eaten liver for decades. It may be the only type of meat I've been put off.

I was diagnosed with a vitamin B deficiency a couple of years ago for which I have to take daily supplements, and also high dose jabs for a few consecutive days about once a year now. Apparently it's something that vegetarians suffer with as we mainly source vitamin B from meat. This is strange because if a cow stands still long enough I'll put a slice of bread each side and eat it ! On one of my visits to the quack, he said that he had seen a huge increase in vitamin B deficiency recently, and his personal thoughts were that it could be related to either covid or the vaccine, but he had nothing concrete to prove it one way or the other. Regarding vitamin D, I'm going to ask my doctor if he can prescribe holidays to the Maldives to boost my sun intake.

It's true that taste alter as we age. I believe it was an evolutionary change which stopped young children eating stray berries or other things which may be harmful - some food, like various vegetables, tastes much more bitter to children.
