If it was a spontaneous gesture, I would say just buy a bunch of flowers, and they don't have to be expensive. Birthday's are a tad different, because she will want to show the gift to her friends and family. Restaurants and Spa's might be tricky with the changing Covid regulations.

I have been married over 20 years & about 19 years ago my Mrs banned me from buying any jewelry unless she was there to approve it - when gifting these days my only function now is to pay for it.
