Medical students learn nothing about nutrition

That will only happen if we as a species haven't already destroyed ourselves and become extinct and replaced by a far superior species.

Which is probably the more likely outcome.

It already is. You only have to look at the number of films on netflix - What the health, cowspiracy, Forks over knives, Okja amongst about 20 of them and the fact that they are influencing people and opening their eyes to the health benefits of a vegan diet as well as the devastating effect the meat and dairy industries are having on the planet. There are people who dont believe in climate change but plenty of people do and knowing that their diet is a major cause will make them question their dietary choices further.
If people go into any major bookstore and look in the cookery section and they'll see an ever growing number of books in the vegan section - a section that didn't even exist 10 years ago. Then look in the supermarkets and see the number of alternatives to milk available. The growing number of vegan products and meals in restaurants also shows that demand for vegan products is increasing and businesses can see this. As the products increase people will find it easier to switch and transition to a vegan diet. This is just the start of people being more informed about what happens to animals in the meat and dairy industry. The mainstream media hasn't entertained a discussion on these issues in my lifetime and they still rarely discuss what happens or show images of what happens to animals but it cant be hidden anymore and as more people see what is happening and understand the effects on our health and the planet then more people will question the necessity for eating animal products. Whereas previously there was no debate because there was nobody to debate with, the steadily growing numbers mean the voices will become louder and it will become more and more difficult to justify the unnecessary killing of animals while it destroys the planet and causes so much suffering. This vegan world might not happen in our lifetime but it will happen... and it'll be a step forward in our evolution and as Einstein said
"Nothing will benefit health or increase chances of survival on earth as the evolution to a vegetarian diet."

I believe it will happen and if it doesnt it will only be because we are so stupid and messed up that we destroy ourselves, the planet and everything on it first.
Very possible but hopefully we will wise up before that happens.

What about insects? It's true meat consumption will go down for reasons stated, maybe...
It's been predicted that as in Asia the west will follow their dietary options.
Insects are easier to farm and cheaper. They are full of protein and environmentally friendly.

They are slowly being introduced into western culture now, so surely it's just a matter of time.

Scorpion on a stick is really tasty so I hear.

I saw a TV program a few months ago about a UK company that breeds insects to cook in their own restaurant and everyone that tried their insect burgers said how nice they were.

Ha ha. You are funny. People would live longer if they stopped drinking alcohol all the time, didn't smoke, exercised regularly, ate less and wore sunscreen when outside for long periods.
What you eat is way down the list of risk. Humanity is doomed by rising population. The planet will take care of itself until the Sun expands. How many times have I got to tell you that you can't fix a problem like rising population by worrying about the symptoms?
