On masterchef Megan mckenna is making gluten free pasta. Did research and she was diagnosed in 2016 with coeliac disease. As some may know my youngest son was diagnosed with it in 2018. My neighbour who is 55 has just been diagnosed. I did have a chat with him and said how difficult it is to actually totally change a mindset about what he eats. Giving it a go though so fair play.
Fresh Meat, veg and fruit are mostly naturally GF. If anyone does get diagnosed please do your homework as coeliac disease can damage. In the past the quack would say it was IBS but now they are doing further investigation and finding it is coeliac in some cases.

Keto/Carnivore is the diet you want to be on none of this pasta and other carbs which have claims of no gluten etc.

My wife was diagnosed Coeliac several years ago.

Following a strict GF diet has made an amazing difference to her health .

Its hard sometimes to be taken seriously as so many folk go GF from choice rather than necessity and that's fine but suppliers ie restaurants pubs shops and friends need to understand a coeliac who breaks a GF diet can be seriously ill very quickly worst effects tend to wear off quickly but does often days for system to properly settle.

It can be hard at first to get into swing of a GF diet initially but its a whole lot easier now with many specific products available and many where recipe has been changed to exclude Gluten .great example it was hard to find a GF sausage and specific brands had to be sought out now may supermarket own label sausages are fine as wheat flour replaced by rice or potato flour and you just do not know difference . We both share virtually same diet at home and fairly careful about cross contamination .Gf bread pretty foul by comparison but you can even get some pretty decent GF draught ale now .

Good luck finding your way around the diet .It teaches you to read labels closely and you soon learn that rubbish Gluten containing fillers put in some products
that have no reason to be there ie in some Yoghurt some ice cream so its a bit of a maze Just dont forget wheat free does not mean GF gluten is in many cereals and also in loads sauces also real big trap in restaurants when they say chips are GF as it says so on packet and then they fry fish in same oil that fish batter fried in . Even had one Italian restaurant rescue some veg from wife's plate as they realised they cooked it in same water their normal Pasta was cooked in !

You can get an app from coeliac Web sites to scan bar codes on food items to highlight whether GF or not. As for the bread my son prefers the paninis and ciabatta breads made by SCHAR. Not the same as normal bread but the best taste he has found.
