so I'm confused how clubs buy big players when managerless. Obviously if they bought a 16 yr old kid with potential that would make sense and cuck him in the squad or youth set up. But to buy a first team capable player for a large fee without a manager seems rather strange. so maybe they have a football director but how would they know the next manager coming in wants to play with out and out wingers?

It is wrong to think that managers sign players. In the modern game it tends to be the 'technical' staff that do most deals which don't necessarily include the players that the manager wants. Look at Newcastle - Benitez only agreed to stay if he had final say on any incoming transfers.
