BBQ season...what do you cook on?

It is now that time of year when we dust off the bbq, then proceed to drink too much before the first batch of sausages have been burnt to a crisp, convincing ourselves that the charred taste is authentic.

Anyhow, I am in need of an upgrade. What do you all prefer out of gas or charcoal?

I was looking at a the Kamado Joe Junior as it will allow me to burn more than just sausages.

All bbq tips and recommended kit is welcome.

I hope that you are joking about cooking sausages on the bbq as if you are going to spend as much as a Kamado Joe Junior will cost you I hope that you will be much more adventurous

I have a choice of barbecues at home including a Weber charcoal and a Grill Stream gas bbq and tend to use the latter as it's easier to set up and cook on and still has the proper barbecue flavour. As it uses the grillstream technology it doesn't suffer from flare ups but on the downside it's far more difficult to clean.

We started off last week with a joint of pork and as the forecast for this weekend is also good I will buy a joint of whatever looks nice to bbq on Sunday

have a big green egg - same as kamodo (not really any different from what i can tell) and a weber gas grille.

i will say the ceramic is really a different experience than a gas grille. meat tastes fantastic.

the problem is a ceramic (or regular charcoal) requires a bit more of a time investment as you have to get the temperature just right. this can take 15-20 minutes; and then, of course, it's going to slow cook. not like just turning on the gas and you're off and running. if you have kids/responsibilities, grilling with a ceramic is probably just for the weekends.

for the ceramics, there are all different types of wood and "flavors" out there now so you can have fun tinkering all summer with different combinations.

i'd say if you're looking for an everyday grille just so you can make some sausages for yourselves or when friends come over, then go gas. if you're looking to have more of a fancy experience, cooking higher end meats or whatever else, and have the time, you won't be disappointed in a cermaic.

BBQ's are a lot bother over nothing.

I have often wondered why some men make such a big deal out of it when their wives can't get them anywhere the kitchen cooker for the rest of the year.

I have got through 3 BBQ's in the last 15 years and I would say that charcoal cooks less aggressively and tastes a little better than gas but is messy and bothersome to light.
Cook the meat in the kitchen and take it outside is my advise. It's a lot less buggering about. The outdoor stuff is just caveman posturing.

Using gas to fuel a BBQ is out and out cheating. Wood or charcoal and disappointing results is the only true way.

do you still have the drip pans? always lost mine and would have to shove a plate underneath, which invevitably slipped out and i'd have chicken grease eveywhere.

Totally agree. It's not a BBQ when it's gas. My dad got a gas BBQ a couple of years ago and I thought about never going round to see my parents ever again. Blasphemy. Half the fun of a BBQ is the old runny bum gamble.

It's the closest most domesticated males want to get to surviving in the wild. It feels macho to cook something using a fire whilst stood up holding some tongs like some kind of p**** extension. In most men's heads they see themselves stood over the carcass of a bear they just killed whilst surviving in the wilderness all on their own. Of course, in reality, deprive them of a 2 in 1 shampoo for 2 days and they'd have a meltdown.

Aside from "what do you cook on?" there is alsothe delicate question of "what do you cook in?"

Now naturists aside (who need to for health & safety's sake) why do so many men using a barbeque feel the need to wear a stupid design apron?
